Quick but Soft and Juicy Pork Ribs (pressure cooker)

Softest and juiciest pork ribs from scratch in under half an hour!!!!! (Apart from marinating time). Pressure cooker, baby!!😍

It's under both pressure cooker and grill categories as you cook it in pressure cooker and finish off under the grill. Or in my case with the blow torch.

 Couple racks of baby pork ribs
 Your favorite meat rub
 1 cup Apple cider vinegar
 Your favorite bbq sauce

It’s best to get ribs that are not marinated if you can, as you need to remove white membrane first, so they are truly falling apart. Pick it with the knife and use paper towel to grab it and pull away.

Marinate in your favourite rub. I used Kansas style rub. Let sit as long as you have time , I just had one hour to spare.

BBQ Galore shops are great to stock up on all sorts or meat Rubs and BBQ sauces.

Add to pressure cooker ensuring ribs are sitting either on the side or standing up as an arch (so they don’t burn to the bottom). Add 1 cup of apple cider vinegar for liquid. A bit more if you have a lot of ribs. Add extra water if needed. You want a bit of liquid so it doesn't burn.

Cook for 22-25 min on high depending on how thick your ribs are. “Keep your nose” on the burning smell. 🙂 turn off immediately if smell it. I set it for 25 min, but had taken out at 22 as started to smell burning. Lucky it didn’t ruin the whole thing and I just needed to cut off couple small pieces. So take my advice on how to place them.

Take them out, brush with your favourite bbq sauce. I used Brixton Jerk Rum Bbq sauce. Then either put under grill to caramelise or what’s much more fun - used flame torch! (See my video 😋) .

I have failed ribs before. It’s just the worst when it’s tough. - this time as you can see - it was spot on!! And so quick!!!
